Change Employment while OPT STEM Ext Pending and RFE

I got the RFE requesting for my updated I-20 on my current OPT STEM ext application. Now I got a new offer (actually a much better offer), can I transfer to this e-verified company at the moment? The USCIS website says "students who timely filed their STEM extension applications with USCIS will receive an extension of employment authorization after their current employment authorization expires, but for no more than 180 days.", but it doesn't address specific requirements for the employment during these 180 days. If I have to formally file a change of employment application at this moment, what is the procedure and will that be risky? Please advise and I appreciate.

If you already filed for STEM OPT extension you can legally work for 180 days after your initial opt expires unless you get any further notice from USCIS.
