Volunteer work confirmation letter

Hello!

Could someone share a sample volunteer work confirmation letter? I volunteered with my Professor to a write a Journal with him. Will this count as volunteer work? This was totally an unpaid position, will this pose a problem for STEM extension? Also, I just wanted to know the specific details the letter should address. If someone could please share a letter format or just a sample letter, it would be very beneficial to me!
