Can we work in a company which is not e-verified during my OPT??

Can we work in a company which is not e-verified during my OPT?
If yes, the only disadvantage is that I cant use STEM extension....am i right?
So that means, I need to move to company which is e-verfied within my 1 year OPT period, right?
