Can I join a NOT E-Verified Company? Will there be issues with H1B and OPT Extension?

I got my OPT Extension recently. I got a full time job opportunity from a company which NOT E-Verified. Will there be any problem if I shift to that company? Can they file my H1B? But the company HR said they have filed the H1B previously
