STEM OPT to CPT transition

Hi,
Current STEM OPT expires on Aug 21. Joining Day 1 CPT on Aug 19. New school asked the SEVIS record to be released by old school before Jul 25th.
The question is, if done as requested, will the STEM OPT be still applicable until Aug 19 or will it expire as soon as the SEVIS record is released. If the STEM OPT remains as is, can an employer change be made on STEM OPT in this gap.

As one can work for multiple employers there is no reason why you cannot change the employer but the change must approved by USCIS
